INGREDIENTS

  • 1 (10 oz) can Mild Rotel, drained
  • 2 (15 oz) cans white shoe peg corn, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 red onion, diced
  • 1 bell pepper, diced
  • ⅓ cup fresh cilantro, chopped
  • 2 avocados, diced
  • 8 oz zesty Italian dressing
  • 2 tablespoons Any Reason Seasoning (or your favorite seasoning blend)

 

DIRECTIONS

Step 1:

Drain the can of Mild Rotel and add it to a large mixing bowl.

 

Step 2:

Drain both cans of white shoe peg corn and add them to the bowl.

 

Step 3:

Drain and rinse the black beans, then add them to the mixture.

 

Step 4:

Dice the red onion and bell pepper into small pieces. Add them to the bowl.

 

Step 5:

Chop the fresh cilantro and mix it into the vegetables and beans.

 

Step 6:

Dice the avocados and gently fold them into the mixture.

 

Step 7:

Shake the zesty Italian dressing well, then pour approximately 8 ounces over the ingredients.

 

Step 8:

Add 2 tablespoons of Any Reason Seasoning (or your preferred seasoning blend).

 

Step 9:

Stir everything together until well combined and evenly coated.

 

Step 10:

Cover and refrigerate for at least 1 hour. For the best flavor, chill for 2 hours before serving.

TIPS:

  • Serve with tortilla chips, crackers, or as a topping for grilled chicken or fish.
  • For extra heat, use Hot Rotel instead of Mild.
  • Add diced jalapeños for an extra kick.
  • This recipe is best enjoyed the same day because of the avocado.
